Another biscuit-inspired cake bake. This recipe makes the most of vanilla flavours, with an added wafer treat on top. The pink and white swirled icing really adds a nice effect too. They would look great on a stand for afternoon tea!
I used a standard cupcake recipe that I always use (4oz butter, 4oz sugar, 2eggs, 4oz flour) with an added few drops of vanilla essence.
You will need:
- 4oz butter.
- 8oz icing sugar.
- OR one tub of ready made vanilla buttercream.
- red food colouring
- 6 – 8 pink wafers.
Method:
- Separate your buttercream into two parts. Add a drop of red food colouring to one half of it, remember you only need a small amount to make pink.
- Add the white and pink buttercream to a piping bag and pipe a swirl pattern on to each cake. Tip: put your piping bag in a glass while you fill it up so that its upright.
- Break your pink wafers into three pieces (carefully). Place them on top of the icing and push down gently.
Its always a good idea to have something to top a cupcake with, so that you don’t have to worry as much about how neat the piping looks. It also adds an extra bit of decoration.
